New York was one of the earliest testing grounds in North America where container cafés began to take shape on a larger scale. SnackBox's 20ft container café in Times Square was transformed by an architectural team into a fully functional street café featuring folding walls and an integrated awning system. The project was also recognized with a "Store of the Year" award by a retail design association.
Later, Blue Bottle Coffee tested the container café concept at locations such as Bryant Park and Williamsburg, using seasonal deployments to respond to changing customer traffic and site conditions.
Cases in the Midwest show a different approach. The SERV project in Overland Park, Kansas, consists of 19 repurposed shipping containers, seven of which were converted into fully equipped kitchens with sliding service windows. The project team selected container-based construction primarily for its cost efficiency. Compared with conventional construction, factory prefabrication helped reduce onsite waste and subcontracting costs. The 19 containers completed the entire process-from manufacturing to transportation across more than 700 miles-in approximately 16 weeks.
